Mashed Potatoes


Mashed Potatoes

A staple of holiday dinner, or any dinner at Mom's table.

Ingredients

  • Medium to large red skin potatoes
  • Water
  • 1t salt
  • Butter
  • Milk

Directions

  1. Peel the potatoes and wash clean.
  2. Cut potatoes into small pieces- about the size of dice.
  3. Place potatoes in kettle and cover with water. Add salt to kettle.
  4. Boil until fork easily goes into the potatoes.
  5. Drain water from kettle.
  6. Add milk to about 1/4 depth of the potatoes.
  7. Return kettle to heat and cook until milk comes to a rolling boil.
  8. Add butter and remove from heat.
  9. Mash potatoes with masher. Whip potatoes until they are smooth.
  10. Serve.

Some people like to use an electric mixer for the whipping. That is OK. On occasion I have added too much milk, that is not good. Too little is correctible. Neither too much, nor too little butter is possible. Practice subtle changes each time until you find your perfect balance, as Mom did. – Hal.
