
PASTA ALA CAPRESE

Delightful pasta addition to any meal
From Aunt Ev – one of the best ways to use fresh
Ingredients
- 5 c fresh tomatoes, sliced thin
- 3-4 cloves garlic, smashed
- 1 sweet yellow pepper, sliced thin
- 20 leaves basil, torn
- 1/2 c olive oil
- 1 t salt
- fresh ground pepper
- 8 oz mozzarella cheese, cubed
- 1 lb pasta (corkscrew shapes are best)
Directions
- Mix tomatoes through ground pepper in large bowl and let stand on counter for at least 1-1/2 hours.
- Add cheese to tomato mixture.
- Add cooked, hot pasta.
- Serve immediately.
