Delightful pasta addition to any meal

From Aunt Ev – one of the best ways to use fresh

Ingredients

  • 5 c fresh tomatoes, sliced thin
  • 3-4 cloves garlic, smashed
  • 1 sweet yellow pepper, sliced thin
  • 20 leaves basil, torn
  • 1/2 c olive oil
  • 1 t salt
  • fresh ground pepper
  • 8 oz mozzarella cheese, cubed
  • 1 lb pasta (corkscrew shapes are best)

Directions

  1. Mix tomatoes through ground pepper in large bowl and let stand on counter for at least 1-1/2 hours.
  2. Add cheese to tomato mixture.
  3. Add cooked, hot pasta.
  4. Serve immediately.
