
OYSTER STEW
A “Hefty Holly” Recipe
Ingredients
- 1 1/2 tbsp flour
- 1 1/2 tsp salt
- Dash tabasco (liberal)
- 2 tbsp cold water
- 1 pint oysters including liquor
- 1/2 stick butter
- 2 cups milk
- 2 cups heavy cream
Directions
- In a small bowl, blend the first 4 ingredients into a paste.
- In a pan, combine oysters and butter, and simmer for 5 minutes or until oyster edges curl.
- Scald the mixed milk and heavy cream. (Can use Half and Half instead of milk/heavy cream)
- Pour the scalded liquid into oysters, mixing as you combine.
- Move from heat, let stand, and serve with oyster crackers when ready.
A traditional, classic, favorite for those northern winter holidays. Turns out it is also good in Florida, and other warm climes.
