OYSTER STEW

A “Hefty Holly” Recipe

Ingredients

  • 1 1/2 tbsp flour
  • 1 1/2 tsp salt
  • Dash tabasco (liberal)
  • 2 tbsp cold water
  • 1 pint oysters including liquor
  • 1/2 stick butter
  • 2 cups milk
  • 2 cups heavy cream

Directions

  1. In a small bowl, blend the first 4 ingredients into a paste.
  2. In a pan, combine oysters and butter, and simmer for 5 minutes or until oyster edges curl.
  3. Scald the mixed milk and heavy cream. (Can use Half and Half instead of milk/heavy cream)
  4. Pour the scalded liquid into oysters, mixing as you combine.
  5. Move from heat, let stand, and serve with oyster crackers when ready.

A traditional, classic, favorite for those northern winter holidays. Turns out it is also good in Florida, and other warm climes.
