
CHOCOLATE PIE
From Mama Schaeffer’s collection (The Life Cycle of a Pie)
Ingredients
- 2 cups whole milk
- 1 cup sugar
- 1 egg
- 1 1/4 tbsp cornstarch
- 1/2 heaping tbsp flour
- 1 1/2 – 2 tbsp cocoa
Directions
- Split milk, put half milk in top of double boiler and add sugar.
- Beat rest of milk, egg and the other ingredients. Strain if lumpy.
- Add chocolate mixture to warm milk and sugar, stirring constantly.
- Add more flour or cornstarch to thicken.
- Remove from heat when the cream mixture is really thick and let cool.
- Fill cooked pie shell with cream mixture and refrigerate.
- Top with whipped cream.
Mom had many pies that fell into the favorites category. This one though was a special favorite among the Grandchildren and Great Grandchildren and their peers. Not only did they savor the taste, they anticipated and enjoyed searching the house to make sure that Mom had kept tradition alive.
