CHILI CON CARNE
Mama Schaeffer’s version on that day
Ingredients
- 1 whole stalk celery
- 3 green peppers
- 3 red peppers
- 1 red hot pepper
- 1 green hot pepper
- 3 cups lg onions (3)
- 4 qts. tomatoes
- 4 lb hamburg
- 1 can kidney beans
- 4 teaspoon salt
- 5 teaspoon chili powder
- 1/2 teaspoon red pepper
- dash black pepper
Directions
- Cut up, dice, first five ingredients. Add until you have 9 cups total.
- Saute vegetables in frying pan and then hamburger.
- Put tomatoes in pot and stew.
- Add vegetables and hamburger to tomatoes and add salt, pepper, and chili powder. Continue to stew the pot.
- Add more tomatoes, salt, and chili powder to taste.
- Add kidney beans 10 min before serving.
- Makes a large kettle.
Aw, again, Mom’s phrase “add …… to taste”. Actually, this recipe was so good as prepared, the bowl never needed additional amounts of any of the ingredients. The bowl only needed another serving(s). Mama frequently made chili for us to enjoy. It was generally always the same – but was usually made from memory. On this day she made notes for us so we could train our own memories.
