BAKING POWDER BISCUITS
Mama used this one as the base for her shortcake delights – strawberry or peach shortcake.
Ingredients
- 2 cups sifted all-purpose flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cream of tartar
- 2 tsp sugar
- 1/2 cup shortening
- 2/3 cup milk
Directions
- Combine flour, baking powder, salt, cream of tartar and sugar and sift.
- Add in shortening. Cut in until it resembles coarse crumbs.
- Add all the milk and stir. Stop only when dough follows the fork around the bowl.
- Turn out onto lightly floured surface and knead gently for a half-minute.
- Spread out, roll or pat it out, to a 1/2 inch thickness.
- Cut with a biscuit cutter or a glass into individual round pieces.
- Bake on an ungreased pan at 450 degrees for 10 -12 minutes.
- Serve warm with berries and whipped cream.
Mom most often did not cut into individual biscuits. She usually baked in one or two round baking dishes and cut the finished biscuit into wedges, sliced so she could serve a layered, bottom-berries-top-berries-whipped cream delight. I remember this recipe as one of my all-time favorites.
