BAKED BEANS

Ingredients
- 1 lb Great Northern Beans
- Salt pork
- Water
- Chili sauce or ketchup
- Salt
- Pepper

(Unedited, in Moms’s own words.) Apr. 13, 1999Dear Harold and Peggy, As you know I don’t have exact measurements to give you but here is what I do. 1 lb. Great Northern Beans – whatever size you prefer, I take medium. If you think the pound is to much, use half. A piece of salt pork, lean as possible not all fat. Doesn’t have to be a big piece, depends one how much you want. If you had a piece of ham you wanted to use up you can use that. Soak beans in cold water over nite, be sure enough to cover. Next day, drain beans, cook in fresh water along with the meat. Cook at a steady boil until tender stirring from time to time, probably 1 1/2 to 2 hours. When soft remove from stove, drain off part of juice (save it in case you find you drained off to much). You can cut meat did small pieces and mix in to the beans or slice it4 and lay on top of beans. Add some chili sauce or ketchup according to your taste and mix together. Put in casserole and sprinkle a little salt and pepper on top. Be sure there is enough juice to cover beans but not up to top of casserole as it will cook over into oven. Put a cover on casserole and bake at 325 degrees. Remove cover last half hour of baking time. Time for baking kind of depends on how soft beans were cooked. Probably 1 – 1 1/2 – 2 hours.
I’m sending along this other recipe from the cook book because it gives measurements but I can’t understand that 8 hours baking time.
